The Vollkornbrötchen — whole grain roll — is a staple of the German breakfast table, prized for its sturdy texture and nutritious seed coating. This keto version captures that same satisfying density and crunch using almond flour, psyllium, and a generous coating of mixed seeds. They are excellent warm from the oven but also slice cleanly and hold well for packed lunches.
