The Black Forest Gateau is Germany’s most internationally recognised cake, and it absolutely deserves its fame — pure Black Forest magic. This keto version delivers every element of the original — the dark, moist chocolate layers, the billowing cream, and the boozy cherries — with almond flour replacing wheat and erythritol for sugar. It requires some effort but repays it with a centrepiece dessert of genuine splendour.
