Lübeck marzipan is among the most famous confections in Germany, made since the 13th century from almonds and sugar in the city’s famous Niederegger shop — the confectionery tradition of Lübeck condensed into one perfect, keto-friendly bite. This keto version uses almond flour and erythritol to create a marzipan with the same silky texture and intense almond flavour, then rolls it around a small piece of 85% dark chocolate for a bittersweet centre.
