The brown shrimp of the North Sea — Nordseekrabben — are tiny, intensely sweet, and hand-peeled. They are a protected treasure of the German coast, and their preparation traditionally could not be simpler: mixed with real mayonnaise, fresh dill, lemon, and cucumber, served on dark bread — a coastal classic of astonishing delicacy. This keto version serves them in lettuce cups, but the shrimp are the undisputed star. One taste and you are on the North Sea promenade.
