Smoked Trout with Horseradish Cream, plated and ready to serve

Germany’s pristine mountain streams and lakes produce some of Europe’s finest trout, and cold-smoking transforms this already beautiful fish into something extraordinary — a German forest stream on your plate. The horseradish cream is the traditional accompaniment — its sharp, sinus-clearing heat cuts through the richness of the smoked fish with surgical precision, while the fresh dill bridges the two with herbal fragrance.
