Ingredients

  • 4 pork cutlets about 1/4-inch thick
  • 8 slices prosciutto
  • 8 fresh sage leaves
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1/2 cup dry white wine optional
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Season the pork cutlets with salt and pepper. Place 1 or 2 sage leaves on each cutlet and wrap tightly with 2 slices of prosciutto.
  • In a large skillet, heat butter and olive oil over medium heat. Cook the pork cutlets for 3-4 minutes per side, until golden and crispy.
  • If using wine, pour it into the skillet and scrape up any browned bits. Simmer for 2-3 minutes until the sauce reduces slightly.
  • Serve the pork cutlets with the pan sauce, garnished with fresh parsley.

Notes

Chef's Tip: Press the prosciutto on firmly as you wrap so it seals to the pork during cooking - a loose wrap tends to unravel in the pan. Keto Swap: none needed - naturally keto.
