Kenyan Goat Nyama Choma, Grilled, plated and ready to serve

If beef nyama choma is Kenya’s everyday grill, goat is often the more prized version — the meat that shows up at weddings, graduations, and big Sunday family gatherings. The method is nearly identical to the beef version earlier in this book, but goat’s leaner, slightly more mineral flavor holds up differently over charcoal, and most Kenyans will tell you a good goat nyama choma is the higher compliment.
