The Bienenstich — whose name supposedly refers to the bee that stung the baker who created it — is a two-layer almond cake with a caramelised almond topping and a thick vanilla cream filling. It is one of Germany’s most dramatic-looking baked goods, and the interplay of textures — crispy topping, soft cake, and billowing cream — is extraordinary. This keto version sacrifices nothing.
