Jägersoße — hunter’s sauce — is the German sauce that makes Schnitzel legendary, transforms simple pork chops into something worth remembering, and elevates a basic piece of roasted chicken into a dinner party dish, sensational on everything it touches. The key is patience during the mushroom-browning stage and quality ingredients throughout. Make it with dried porcini for an earthy depth you simply cannot achieve with fresh mushrooms alone.
