Servings: 4 servings
Calories: 400kcal
Ingredients
- 4 veal or beef shanks about 1.5 inches thick
- 2 tbsp olive oil
- 1 onion chopped
- 2 garlic cloves minced
- 2 carrots diced
- 1 zucchini diced
- 1 cup cauliflower florets
- 1 cup beef broth low-sodium
- 1 cup dry white wine optional
- 1 can 14 oz diced tomatoes (no sugar added)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 325F (160C).
- In a large oven-safe pot, heat olive oil over medium heat. Season the shanks with salt and pepper, and brown them on all sides, about 4 minutes per side. Remove from the pot and set aside.
- In the same pot, add the onion, garlic, carrots, zucchini, and cauliflower. Saute for 5 minutes until softened.
- Stir in the beef broth, white wine (if using), diced tomatoes, thyme, and rosemary. Bring to a simmer.
- Place the shanks back into the pot, cover, and transfer to the oven. Cook for 2-3 hours, until the meat is tender and falling off the bone.
- Serve the Osso Buco with the vegetables and sauce, garnished with fresh herbs.
Notes
Chef's Tip: Don't rush the braise - the long, slow oven time is what breaks down the connective tissue in the shank and makes it fall-off-the-bone tender. Keto Swap: traditional risotto or potato accompaniment is replaced with cauliflower and zucchini braised right in with the shanks.
