Ingredients
- 1 head cauliflower cut into florets
- 1/2 cup heavy cream
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 375F (190C).
- Boil cauliflower florets for 5 minutes, then drain.
- In a baking dish, combine cauliflower, heavy cream, mozzarella, Parmesan, salt, and pepper.
- Bake for 20-25 minutes, until golden and bubbly.
- Serve warm as a creamy, keto-friendly side dish.
Notes
Chef's Tip: Don't overcook the cauliflower in the boiling step - it finishes cooking in the oven, and starting too soft leads to a mushy gratin. Keto Swap: traditional potato au gratin is replaced with cauliflower florets.
