Ingredients

  • 2 medium zucchinis thinly sliced
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  • In a bowl, combine zucchini slices, olive oil, vinegar, Italian seasoning, salt, and pepper. Toss to coat.
  • Refrigerate for at least 1 hour before serving.
  • Serve cold or at room temperature.

Notes

Chef's Tip: Slice the zucchini paper-thin - thin slices marinate through fully in the hour of chilling; thicker ones stay raw-tasting at the core. Keto Swap: none needed - naturally keto.
