Ingredients
- 1 lb large shrimp peeled and deveined
- 3 tbsp butter
- 4 garlic cloves minced
- 1 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley chopped
- Salt and pepper to taste
Instructions
- Heat butter and olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove and set aside.
- In the same skillet, add garlic and saute for 1 minute, until fragrant. Stir in the lemon juice and zest, and simmer for 2 minutes.
- Add the shrimp back to the skillet and toss in the lemon garlic sauce to coat. Cook for another 1-2 minutes, just to warm through.
- Garnish with fresh parsley and serve with your favorite keto side dish, such as cauliflower rice or zucchini noodles.
Notes
Chef's Tip: Zest the lemon before you juice it - it's much easier to zest a whole lemon than one that's already been squeezed. Keto Swap: none needed - naturally keto.
