Ingredients
- 1 large head cauliflower cut into florets
- 3 tbsp olive oil
- 3 garlic cloves minced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400F (200C).
- Toss the cauliflower florets with olive oil, garlic, salt, and pepper. Spread on a baking sheet.
- Roast for 20-25 minutes until tender and golden brown. Sprinkle with Parmesan and roast for another 5 minutes.
- Garnish with parsley and serve warm.
Notes
Chef's Tip: Spread the florets in a single layer with space between them - crowding steams the cauliflower instead of roasting it. Keto Swap: traditional roasted potatoes are replaced with cauliflower florets - this is the classic potato-to-cauliflower swap that anchors most keto side dishes in this book.
