- 1 cup shredded mozzarella cheese
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup sugar-free pizza sauce
- 1 tsp Italian seasoning
- 1/4 cup mini pepperoni slices optional
Instructions
- Preheat your oven to 375F (190C) and grease a mini muffin tin.
- In a bowl, mix the mozzarella, almond flour, Parmesan, and Italian seasoning until combined.
- Press small amounts of the mixture into the greased muffin tin, creating a small indentation in the center of each one.
- Spoon a small amount of pizza sauce into the center of each bite and top with mini pepperoni slices.
- Bake for 10-12 minutes, or until the edges are golden and the cheese is bubbly.
- Let cool for a few minutes before serving warm.
Notes
Chef's Tip: Let the bites cool for a couple of minutes before popping them out of the muffin tin - they firm up as they cool and are much less likely to fall apart. Keto Swap: traditional pizza dough is replaced with a cheese and almond flour base (fathead-style).
