Ingredients

  • 1 lb ground beef or pork or a mix
  • 1/4 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 garlic cloves minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil for frying

Instructions

  • In a large bowl, mix the ground meat, almond flour, Parmesan, egg, garlic, Italian seasoning, salt, and pepper until well combined.
  • Roll the mixture into small meatballs, about 1 inch in diameter.
  • Heat olive oil in a large skillet over medium heat. Add the meatballs and cook for about 10 minutes, turning occasionally, until browned and cooked through.
  • Serve warm, with or without keto marinara sauce.

Notes

Chef's Tip: Don't overwork the meat mixture once the almond flour goes in - overmixing makes the meatballs dense instead of tender. Keto Swap: traditional breadcrumbs are replaced with almond flour.
