- 1 large head romaine lettuce chopped
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 garlic clove minced
- 1 tsp lemon juice
- 1 tsp anchovy paste optional
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together the olive oil, mayonnaise, Dijon mustard, garlic, lemon juice, and anchovy paste (if using). Season with salt and pepper.
- In a large bowl, toss the chopped romaine with the dressing.
- Sprinkle with grated Parmesan cheese.
- Serve immediately.
Notes
Chef's Tip: Add the anchovy paste even if you're unsure about it - it dissolves into the dressing and adds savory depth without any noticeable fishy flavor.
