Southern Meatloaf with Tomato Glaze, plated and ready to serve

Meatloaf shows up on soul food tables just as often as it does anywhere else in the South, usually topped with a sweet-tangy glaze that caramelizes in the oven. Almond flour keeps this version moist and holds it together without the breadcrumbs, and a sugar-free glaze delivers that same glossy finish.
