Lowcountry shrimp and grits made its way from breakfast tables into fine dining, and it’s easy to see why — briny shrimp, smoky bacon, and a butter-forward Cajun sauce over something creamy underneath. This version keeps every bit of that restaurant-plate presentation while swapping the corn grits for a cauliflower base that takes on the cheese and butter just as well.
What You’ll Need

Calories: 415kcal
Ingredients
- 1 lb large shrimp peeled and deveined
- 4 slices bacon chopped
- 3 tbsp butter divided
- 3 cloves garlic minced
- 1 tsp Cajun seasoning
- 1/2 cup chicken broth
- 1 tbsp lemon juice
- 1 medium head cauliflower riced
- 1/2 cup heavy cream
- 3/4 cup sharp cheddar shredded
- 2 green onions sliced
- Salt and black pepper to taste
Instructions
- Steam riced cauliflower until tender, about 8 minutes. Drain well, pressing out excess moisture.
- Stir cream and cheddar into the cauliflower until smooth. Season with salt and pepper. Keep warm.
- In a skillet over medium heat, cook bacon until crisp. Remove bacon, leaving fat in the pan.
- Season shrimp with Cajun seasoning. Add 1 tbsp butter to the skillet and sear shrimp 1–2 minutes per side until just pink. Remove and set aside.
- Add remaining butter and garlic to the skillet, cooking 30 seconds until fragrant.
- Pour in broth and lemon juice, simmering 2–3 minutes until slightly reduced.
- Return shrimp and bacon to the skillet, tossing to coat in the sauce.
- Spoon grits into bowls, top with shrimp and sauce, and finish with green onions.
