Southern Fried Catfish and Eggs, plated and ready to serve

Fried catfish for breakfast is a true Southern diner move — a crisp, cornmeal-crusted fillet next to a couple of eggs and nothing else needed. This version builds the crust from almond flour and a touch of golden flaxseed meal to mimic that same gritty, golden-fried texture without the corn.
