Htipiti — Quick Roasted Pepper and Feta Spread, plated and ready to serve

Htipiti means "beaten" or "whipped" — a fast, fiery spread made by whipping feta with roasted red pepper, olive oil, and chili until you have something creamy, smoky, and completely addictive. It is on every table in northern Greece and once you taste it you will understand why. Use it as a dip, a sandwich filling (in lettuce wraps), or spooned over grilled meat.
