Htipiti — Quick Roasted Pepper and Feta Spread

Htipiti means "beaten" or "whipped" — a fast, fiery spread made by whipping feta with roasted red pepper, olive oil, and chili until you have something creamy, smoky, and completely addictive.
Course: Side Dish
Cuisine: Greek
Servings: 1.5 cups
Calories: 135kcal

Ingredients

  • 8 oz feta cheese crumbled
  • 2 roasted red peppers (jarred in brine drained)
  • 2 tbsp extra-virgin olive oil
  • 1 tsp crushed red pepper flakes (more or less to taste)
  • 1 tbsp fresh lemon juice
  • 1/2 tsp dried oregano

Instructions

  • Place all ingredients in a food processor.
  • Blitz until smooth, scraping down the sides as needed — about 2 minutes for a completely smooth spread.
  • Taste and adjust: more chili for heat, more lemon for brightness, salt if needed (feta is very salty).
  • Transfer to a serving bowl. Drizzle with olive oil and a pinch of chili flakes. Refrigerate up to 5 days.
