Traditional baklava is many layers of phyllo, butter, nuts, and honey — magnificent but deeply incompatible with keto. This version uses thin sheets of almond-egg crepes as the phyllo substitute, layered with a cinnamon-walnut filling and drizzled with a sugar-free honey syrup. The result is shockingly close to the original in texture and completely, genuinely satisfying.
