Ingredients

  • 4 eggs
  • 4 oz cream cheese softened
  • 1/4 tsp cinnamon
  • Pinch of salt
  • 2 cups walnuts roughly chopped
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 2 tbsp powdered erythritol
  • 1/2 cup water
  • 1/4 cup sugar-free honey (allulose-based)
  • 1 tsp orange extract or a strip of orange peel
  • 1/2 cinnamon stick

Instructions

  • Crepes: Blend eggs and cream cheese until completely smooth. Let rest 5 minutes. Cook thin crepes in a buttered pan, about 7 inches each. Stack with parchment between.
  • Mix walnuts, cinnamon, cloves, and erythritol in a bowl.
  • Butter a 8x8 inch baking dish. Layer crepes with melted butter between each, sprinkling the walnut mixture every 2-3 layers.
  • Score the top into diamond shapes. Drizzle with melted butter.
  • Bake at 325F (160C) for 25-30 minutes until golden.
  • Meanwhile, simmer syrup ingredients 5 minutes. Cool slightly.
  • Pour warm syrup over hot baklava. Let absorb 30 minutes before serving.
