Polish Jajecznica, Scrambled Eggs with Kielbasa, plated and ready to serve

Jajecznica is the dish most Poles would name first if asked about breakfast — eggs scrambled low and slow, often with whatever good meat is on hand. Kiełbasa is the classic addition, its fat rendering into the eggs as they cook and carrying the smoke flavor through the whole dish.
