Blutwurst — blood sausage — is one of those polarising foods that its devotees love with an almost evangelical fervour. When fried until the casing blisters and chars, the interior becomes almost molten and intensely savoury, while the combination with sweet-sour caramelised apple and onion creates a sweet-savoury balance that converts skeptics at first bite — a deeply earthy German classic. Use erythritol to keep the apple preparation keto-friendly.
