Pork Tenderloin with Mustard-Herb Crust, plated and ready to serve

The pork tenderloin is one of the most underutilised cuts in the home cook’s repertoire — it is lean, quick-cooking, and takes to flavouring beautifully. The mustard-herb-almond crust creates a textural contrast and flavour impact far beyond its humble ingredients, roasted to perfect blush-pink and dripping with a quick pan-sauce reduction of unmatched elegance. The resulting pan sauce, made from the glorious roasting juices and a splash of cream, is so good it deserves its own course.
