In Bavaria, the white Rettich radish is a beer garden staple, typically eaten raw with salt and a cold Weißbier. But slow-cooked and puréed with cream, its sharp bitterness mellows into something deeply complex and warming — a soul-warming soup that challenges everything you thought about this humble root. This Bavarian-inspired keto soup is one of those unexpected discoveries that quickly becomes a household favourite.
