Biryani is India’s most celebratory dish — cooked for weddings, Eid, and all major occasions. The dum technique (steam-sealing) creates a magical exchange of flavors between the rice, meat, and aromatics. Here cauliflower rice faithfully replicates both the grain-like texture and the perfumed aroma of long-grain basmati: strands of saffron dissolve into amber pools that bleed down through layers of fragrant cauliflower rice, sweet caramelized onion, and whole spices — the grandeur and ceremony of biryani, fully alive and fully realized, with every carb quietly replaced and nothing lost.
