Luwombo is a genuine special-occasion dish in Uganda, traditionally wrapped tightly in banana leaf and steamed for hours so the chicken essentially braises in its own sealed, herb-scented steam. This version keeps the technique — a tightly covered pot standing in for the banana leaf wrap — so the chicken still comes out impossibly tender and infused with everything cooked alongside it.
