Ingredients
- 1 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 1/4 cup powdered erythritol
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1/4 cup chopped pecans or walnuts
- Additional powdered erythritol for rolling
Instructions
- Whisk together almond flour, shredded coconut, powdered erythritol, cinnamon, and nutmeg.
- Stir in melted butter, vanilla extract, and chopped nuts. Mix until a dough forms.
- Roll the dough into small, bite-sized balls.
- Roll each ball in powdered erythritol until fully coated.
- Place the bites on a tray and refrigerate for at least 1 hour before serving.
Notes
Chef's Tip: Chill the dough briefly if it feels too soft to roll - cold dough holds its shape far better when forming the bites. Keto Swap: traditional powdered-sugar-coated cookie balls are replaced with almond flour and coconut with an erythritol coating.
