Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup powdered erythritol
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1/4 cup chopped pecans or walnuts
  • Additional powdered erythritol for rolling

Instructions

  • Whisk together almond flour, shredded coconut, powdered erythritol, cinnamon, and nutmeg.
  • Stir in melted butter, vanilla extract, and chopped nuts. Mix until a dough forms.
  • Roll the dough into small, bite-sized balls.
  • Roll each ball in powdered erythritol until fully coated.
  • Place the bites on a tray and refrigerate for at least 1 hour before serving.

Notes

Chef's Tip: Chill the dough briefly if it feels too soft to roll - cold dough holds its shape far better when forming the bites. Keto Swap: traditional powdered-sugar-coated cookie balls are replaced with almond flour and coconut with an erythritol coating.
