Ingredients
- 2 cups heavy cream
- 1/4 cup water
- 2 tsp unflavored gelatin powder
- 2 tbsp powdered stevia or erythritol
- 1 tsp vanilla extract
- Fresh berries for garnish optional
Instructions
- In a small bowl, sprinkle gelatin over the water and let it bloom for 5 minutes.
- In a saucepan, heat the heavy cream and sweetener over medium heat until hot but not boiling. Remove from heat and stir in the vanilla extract.
- Add the gelatin mixture to the warm cream and whisk until fully dissolved.
- Pour the mixture into ramekins or small dessert glasses. Refrigerate for at least 4 hours, or until set.
- Serve chilled, with fresh berries on top if desired.
Notes
Chef's Tip: Let the gelatin bloom the full 5 minutes before adding it to the cream - skipping this step is the most common reason panna cotta doesn't set properly. Keto Swap: traditional sugar is replaced with stevia or erythritol.
