Ingredients
- 4 boneless skinless chicken breasts
- 1/2 cup homemade or store-bought keto-friendly pesto
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375F (190C).
- Rub the chicken breasts with olive oil, and season with salt and pepper.
- Place the chicken breasts in a baking dish and top each one with 2 tablespoons of pesto. Sprinkle Parmesan cheese over the pesto.
- Bake the chicken for 25-30 minutes, until cooked through and the cheese is golden and bubbly.
- Serve warm, with a side of keto-friendly vegetables like sauteed spinach or roasted broccoli.
Notes
Chef's Tip: Use a good, thick pesto rather than a thin one - a runny pesto slides off the chicken instead of forming a crust. Keto Swap: none needed - naturally keto.
