Ingredients

  • 2 large cucumbers sliced
  • 1/2 cup Kalamata olives
  • 1/4 cup crumbled feta cheese optional
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  • In a large bowl, combine the cucumber slices and olives. Toss with the dressing.
  • Top with crumbled feta, if desired.
  • Serve immediately.

Notes

Chef's Tip: Seed the cucumbers if they're large - less water in the salad means the dressing stays put instead of getting diluted. Keto Swap: none needed - naturally keto.
