About This Dish
Chojang is short for chogochujang, a mix of chili paste and vinegar. It is the standard dipping sauce for raw fish, blanched seafood and vegetables in Korea. Blanched broccoli with chojang is a very common banchan at home and in school lunches. Broccoli is a relatively recent addition to Korean cooking but has become extremely popular. Similar blanched dishes are made with squid, octopus and other vegetables.
