Ugandan Egg & Herb Skillet, Rolex-Adjacent (No Wrap), plated and ready to serve

The rolex (a nickname born from “rolled eggs,” not the watch) is Uganda’s ubiquitous street breakfast, sold from carts on nearly every corner in Kampala. This version keeps every bit of the herb-and-vegetable filling that makes the original so satisfying, without the wheat wrap.

Notes

Chef's Tip: Keep the vegetables cut small and uniform so every bite has the classic rolex balance.
Keto Swap: Chapati wrap dropped entirely — vegetables replace the starch, cutting net carbs from roughly 30g to 7g.
Budget Option: This is one of the cheapest recipes in the book to make at scale — cabbage, tomato, and eggs are inexpensive nearly everywhere, making it an easy one to batch for a crowd.
