Kima is the dish that shows up on Kenyan tables far more often than nyama choma ever does — a quick, affordable minced beef stew built on tomatoes, onions, and curry spice, traditionally ladled over rice or ugali. It’s proof that this chapter’s beef tradition isn’t only about big cuts and long cook times; sometimes the everyday version is ground beef in a pan in under half an hour.
