Ethiopian Coffee Ceremony-Style Coffee, Traditional, plated and ready to serve

A full Ethiopian coffee ceremony unfolds in three rounds from a single roasting — abol, tona, and baraka — each round poured from the same jebena, the traditional clay coffee pot. This version keeps the real technique intact; the only adjustment for a keto table is skipping the sugar traditionally stirred in at the end.

Ingredients

  • 1/3 cup green coffee beans
  • 3 cups water plus more for topping up between rounds
  • 1 whole cardamom pod cracked (optional, traditional)
  • Sugar-free sweetener, to taste (optional)

Instructions

  • Rinse the green coffee beans and pat dry.
  • Roast in a dry skillet over medium-low heat, shaking constantly, 10–12 minutes until deeply brown and fragrant.
  • Cool the beans briefly, then grind to a fine consistency using a mortar and pestle or grinder.
  • Bring water to a boil in a jebena or small pot, add the cardamom pod if using.
  • Add the ground coffee, reduce heat, and simmer gently 3–4 minutes without stirring.
  • Let the grounds settle, then pour the first round (abol) slowly into small cups, leaving the grounds behind.
  • Add fresh water to the same grounds for the second round (tona), simmer briefly, and pour again.
  • Repeat once more for the third round (baraka), the traditional final and often mildest pour.
