Woon Gati is Thailand’s most visually striking dessert — alternating layers of crystal-clear pandan jelly and opaque coconut cream jelly, set in a pan and sliced into diamond shapes. The beauty lies in its simplicity and the contrast between the herbal pandan layers and the rich, creamy coconut layers. Agar-agar (not gelatine) gives it the characteristic firm-yet-yielding Thai jelly texture.
