Spanakorizo — Keto Spinach Rice, plated and ready to serve

Spanakorizo is a beloved Greek one-pot comfort dish — spinach and rice simmered together in olive oil, lemon, and dill until they become something much greater than their parts. The keto version replaces rice with cauliflower rice and is, genuinely, just as satisfying. Serve it as a side or as a light meal with a wedge of feta.
