Chłodnik is barszcz’s summer cousin — served cold rather than hot, built on a buttermilk or kefir base with fresh cucumber and dill folded through, and finished with a hard-boiled egg. It’s genuinely refreshing on a hot day, and needs nothing more than a good chill in the fridge.
