Pad Prik is one of Thailand’s most direct stir-fries — no complex curry paste, no long list of aromatics, just beef at maximum heat with dried chilies that toast and soften in the wok, releasing their smoky, fruity heat into the oil. The mushrooms absorb this chili-infused fat and become extraordinary.
