Moo Krata Thai BBQ Pork Belly, plated and ready to serve

Moo Krata (literally ‘pan pig’) is Thailand’s answer to Korean BBQ — a social dining experience where thin slices of marinated pork belly are grilled on a domed metal pan over charcoal. The pork fat drips down and sizzles around the base, creating a communal moat of pork-infused stock. The belly caramelises magnificently over the charcoal heat.
