Lamb Kebabs, Middle Eastern Spiced, plated and ready to serve

This is Sephardic and Mizrahi cooking at its most direct — ground lamb, a well-built spice blend, and a hot grill. The lamb’s natural richness carries the dish without needing much beyond good seasoning and real heat.
