Chicken wings the Greek way — marinated in aggressive quantities of lemon, garlic, and oregano, then grilled over high heat until the skin blisters and crisps and the edges go almost charred and smoky. These are messy, impossibly good, and disappear faster than you can cook them. Make more than you think you need. You will not have leftovers.
What You’ll Need
Servings: 4 servings
Calories: 430kcal
Ingredients
- 3 lbs chicken wings split at the joint (flats and drumettes separated)
- 5 tbsp extra-virgin olive oil
- Juice and zest of 2 lemons
- 4 garlic cloves minced
- 2 tbsp dried Greek oregano
- 1 tsp each smoked paprika and garlic powder
- 1 tsp sea salt and plenty of cracked black pepper
- Fresh lemon and extra oregano to finish
Instructions
- Score the fleshiest part of each wing piece twice to allow marinade to penetrate.
- Combine olive oil, lemon juice and zest, garlic, oregano, paprika, garlic powder, salt, and pepper. Toss with wings until every piece is coated. Marinate minimum 2 hours, up to overnight.
- Remove wings from fridge 30 minutes before cooking.
- Grill on high heat 8-10 minutes per side, turning once, until skin is deeply golden, blistered in spots, and juices run clear. High heat is what crisps the skin -- do not lower it.
- Finish with a squeeze of fresh lemon and a pinch of dried oregano directly on the hot wings.

Health Benefits
- Chicken wings deliver a remarkable fat-to-protein ratio thanks to the skin and joint-adjacent tissue, which is rich in collagen, gelatin, and glucosamine — all of which support joint and gut health.
- The high temperature grilling produces Maillard reaction compounds that contribute deep umami flavor.
- Oregano’s carvacrol has documented antimicrobial and antifungal activity.
