Kotopoulo Podarakia -- Grilled Chicken Wings with Lemon and Oregano

Chicken wings the Greek way -- marinated in aggressive quantities of lemon, garlic, and oregano, then grilled over high heat until the skin blisters and crisps and the edges go almost charred and smoky.

Ingredients

  • 3 lbs chicken wings split at the joint (flats and drumettes separated)
  • 5 tbsp extra-virgin olive oil
  • Juice and zest of 2 lemons
  • 4 garlic cloves minced
  • 2 tbsp dried Greek oregano
  • 1 tsp each smoked paprika and garlic powder
  • 1 tsp sea salt and plenty of cracked black pepper
  • Fresh lemon and extra oregano to finish

Instructions

  • Score the fleshiest part of each wing piece twice to allow marinade to penetrate.
  • Combine olive oil, lemon juice and zest, garlic, oregano, paprika, garlic powder, salt, and pepper. Toss with wings until every piece is coated. Marinate minimum 2 hours, up to overnight.
  • Remove wings from fridge 30 minutes before cooking.
  • Grill on high heat 8-10 minutes per side, turning once, until skin is deeply golden, blistered in spots, and juices run clear. High heat is what crisps the skin -- do not lower it.
  • Finish with a squeeze of fresh lemon and a pinch of dried oregano directly on the hot wings.
