Thai fried eggs are nothing like their Western counterparts. Cooked in a generous pool of smoking-hot oil, they emerge with gloriously lacy, golden-crisp edges while the yolk stays molten and rich. The sauce — pounded garlic, fresh bird’s eye chili, fish sauce, and a thread of lime — cuts through the richness perfectly.
