Tamarind chutney is the dark, sweet-sour-spicy sauce drizzled over everything from chaat to kebabs to samosas. Traditional versions use jaggery for sweetness; erythritol or monk fruit provides the same balancing sweetness without spiking blood sugar. Glossy, dark, and thrillingly complex, this sauce clings to everything it touches and makes you want to drag a spoon slowly through the bowl and lick it clean.
