Ingredients
- 1 large head of cauliflower chopped
- 2 cups kale or cabbage finely chopped
- 1/4 cup butter
- 1/4 cup heavy cream
- 2 green onions finely chopped
- 2 cloves garlic minced
- Salt and pepper to taste
- 2 tbsp olive oil or extra butter (optional, for richness)
Instructions
- Cook the cauliflower: Steam or boil the cauliflower florets until they are soft, about 10-12 minutes. Drain and set aside.

- Combine the mash and greens: Fold the sautéed kale or cabbage mixture into the mashed cauliflower. Stir to combine well. Taste and adjust seasoning as needed.
- Serve: For added richness, drizzle with olive oil or an extra dollop of butter. Serve hot as a perfect keto side dish.
